Blood that enters a slaughtered animal’s lung, kidneys

1) Am I correct in assuming that when an animal is slaughtered for eating, the blood that flows from the neck of the animal is najas but blood that is found later in the meat or organs, is pure and not haram to consume?

1) Your assumption is correct—the blood remaining within the animal’s veins after slaughtering is halal and pure. It is stated in Al-Fatawa Al-Hindiyyah:

وما يبقى من الدم في عروق الذكاة بعد الذبح لا يفسد الثوب وإن فحش . كذا في فتاوى قاضي خان وكذا الدم الذي يبقى في اللحم ؛ لأنه ليس بمسفوح . هكذا في محيط السرخسي .

2) The flowing blood inhaled by the animal and found in the breathing passages and lungs is najis. It must be washed off before consumption. It is stated in Al-Fatawa Al-Hindiyyah:

وما لزق من الدم السائل باللحم فهو نجس . كذا في منية المصلي

3) Kidneys are halal to consume. It is stated in Al-Hindiyyah:

وأما بيان ما يحرم أكله من أجزاء الحيوان سبعة : الدم المسفوح والذكر والأنثيان والقبل والغدة والمثانة والمرارة ، كذا في البدائع .
