Ruling on Selling Sheep by Kilo after Slaughtering

Is it permissible to reach an agreement with a butcher whereby an animal is bought by the weight of its meat after being slaughtered. For example, buying a cow by the weight of its meat after being slaughtered against a certain price for the kilo. If we assume that this transaction is valid, what is the ruling on following this same method to buy an Udhiyah?

What is the ruling on the Zakah of dairy cows, knowing that they are fodder-fed and don`t depend-for sustenance-on pasturing from grass and plants? Is zakah due on them if they were put up for sale? Is Zakah due on the produced milk?

The owner is paid a high price through a delayed cheque, then the buyer sells that commodity instantly for a lower price. These persons keep dealing in such transactions until they become famous amongst people. What is the ruling of Sharia` as regards this type of transaction?
