Question
A famous Hadith is attributed to Nabi (sallallahu ‘alayhi wa sallam): “Die before you die” موتوا قبل ان تموتوا.
Though it has no chain, What/who is the earliest source of this saying?

Although this has been cited in certain non primary sources as a Hadith of Rasulullah (sallallahu ‘alayhi wa sallam), This is not proven as a Hadith as you have stated.

Mulla ‘Ali Al Qari (rahimahullah) has stated that this is the statement of some of the Sufis. I have not come across a specific name.
