When you say “one foot” or “one toe”, am I right in thinking that you mean the bottom part of the foot i.e. the sole, and not the upper part of the foot from the toe nail upwards towards the knee and over the shin.

No, when I say one toe, I mean one toe, whether the top or the bottom. This is why pointing the bottom of the toes towards the qibla is a confirmed sunna.
