What is the opinion on using a set of numbers to represent words, for example, the common use of 786 to represent “Bismillah Ar-Rahmani-Raheem”.

There is nothing wrong with this. The scholars have been using it for centuries in their books without condemnation, and the fiqhi principle is that, “Something accepted generation after generation (by the scholars) cannot possibly be an innovation.”
