Assalamu Alaikum. Recently, I have seen some articles regarding a covenant of prophet Muhammad (PBUH) with monks of Mt. Sinai which I cannot understand whether it is authentic or not. Wa’alaykum as Salam wa rahmatullahi wa barakatuhu,

As Muslims, our method of determining the accuracy and authenticity of anything attributed to the Prophet (sallAllahu ‘alayhi wa sallam) is through a Sanad (chain of transmission). We need to know how this was passed down, so that we can inspect every link in every era.

There is no Sanad for this covenant. The links that you posted further give reasons why this is not authentic.
