Assalamualaikum, my question regards the delaying of the fast after the sunset and would a person’s fast be accepted if they broke their fast after the Isha salah.

Without a genuine excuse, it is “makrooh” to delay “iftar” until the stars begin appearing in the sky, or Isha time sets in. However, the fast will be valid.
عن سهل بن سعد: أن رسول اللہ صلى اللہ عليه وسلم، قال: لا يزال الناس بخير ما عجلوا الفطر.(صحیح البخاري: رقم الحدیث:۱۹۵۷، کتاب الصوم، باب تعجيل الإفطار
