Dry aging meat

Is dry ageing meat permissible

 

 

Answer

In the Name of Allah, the Most Gracious, the Most Merciful.
As-salāmu ‘alaykum wa-rahmatullāhi wa-barakātuh.

Dry-aged beef is beef that has been hung or placed on a rack to dry for several weeks.

The process changes beef by two means. Firstly, moisture is evaporated from the muscle. The resulting process of desiccation creates a greater concentration of beef flavour and taste.

Secondly, the beef’s natural enzymes break down the connective tissue in the muscle, which leads to more tender beef. [1]

From a Shariah perspective, as long as the animal was slaughtered according to the correct procedure, there is no prohibition in dry ageing the meat.
