In Surah Yusuf, it talks about that when Yusuf (A.S) was young he saw a dream about 11 stars, one moon and one sun doing sajdah to him. What is meant by that?

The dream of the eleven stars refers to the eleven brothers os Yusuf (A.S.), the sun refers to his father and the moon refers to his mother.

The above were seen as making sajdah before Yusuf (A.S.) refers to the incident of them coming to Misr where Yusuf (A.S.) was appointed as Minister of Agriculture and bowing before him in acknowledgment of his honorable position and being favored by Allah.

In the Shariah of Yaqub (A.S.) it was permissible to bow down in respect for human beings.
