Is it permissible to mention that one supplicated for something and Allah granted it?

Answer

Yes, it is permissible to do that, and this is common practice among close friends and family in some cultures. However, I always caution that one assess one’s intention in sharing such information. One should not intend to show off, but rather intend to teach or inspire others to seek closeness to Allah Most High.
