If I had an option of jobs: working with a generally good Islamic finance company that sells insurance [that is impermissible] or a job for a non-Muslim company, which would be the preferable one to take? [My own work would be 100% fine in both…]

It would be best to choose the one where you would be able to best maximize personal and general good within your work and in your free time.
