How many talaqs have occurred & can I remarry my wife?

I pronounced one talaq to my wife and let her stay at my home till her iddah period. She suffers from Psychiatric problems and her parents are against her treatment. They interfere a lot in my marital life. After seven years of harassment, in the interest of my two kids, I felt it would be best to give her one talaq so that they would fall in line and accept for her treatment and also stop interfering in my life. I have medical certificates proving the same. I told them that if you accept my conditions I’m willing to reconcile. But my mother-in-law in order to not let us reconcile came to my house and stayed at house for two and a half months. Later she took her daughter (my wife) away with her before the completion of Iddah period. I wasn’t able to reconcile. Now it’s been one year. But my kids are very much attached to me and they are being ill treated at their mom’s place. I’m only meeting my kids at their school as my ex in-laws are not allowing me to meet them. Now for the sake of kids I want to take back my wife only for the sake of the welfare of the children. Now my questions are (1) How many talaqs have occurred, one or two?
(2) Can I make nikah with her again?

If you have given only one talaq then you may take your wife back in your nikah by doing a fresh nikah.
