Is the English commentary of the Quran by Muhammad Muhsin Khan (Darussalam Publications) in the English language sound and authentic? How about his commentary which is accompanied by Sahih Bukhari ahadith? Is it permissible to explain simple Quranic aayat to our students from sound tafseers like Ibn Kathir and Maariful Quran?

We do not know ‘muhsin khan’; if we can find that he is a graduate of an authentic institution than we can rely on him. If he is not a graduate of such an institution and self-studied than we can’t rely on him and we should not listen to him. Usually, people like this make many mistakes in their references.

You can give a brief explanation of the Koran to small kids; you can take some excerpts from ma’arifu quran but not from ibn katheer. The reason is ibn katheer is used to reporting all of the prophetic traditions, which sometimes seemingly contradict each other, and a normal person is not capable of understanding them.
