Can a girl marry a boy of her choice and whom she likes in islam? And if the parents do not accept her decision.what should she do? Can she go against?

If the boy and girl are baligh (adult) and they happily marry in kufu (match/equal rank) then this Nikah will be valid. : کما فی الدر المختار: فنفذ نکاح حرة مکلفة بلا رضا ولی
After all, it is recommended to have the consent of parents. And, if the Nikah is out of kufu (match/equal rank) then it will not be even valid. It is prohibited to disobey parents without any justified reason:
ولہ ای للولی اذا کان عصبة الاعتراض فی غیر الکفؤ ۔۔۔ ویفتی فی غیر الکفؤ بعدم جوازہ اصلاً وھو المختار للفتوی لفساد الزمان (الدر المختار: 4/155)
