Thank you for your important question.
The Hadith you are referring to is:
Abdullah Ibn `Umar narrated that Allah’s Messenger (Allah bless him and give him peace) said, “Whoever misses the `Asr prayer (intentionally) then it is as if he lost his family and property.” [Bukhari, Tirmidhi, and Others]
You should try your best, with absolute respect and good character, to advise your parents to stop for all prayers when traveling.
Allah, Most High says: Invite to the way of your Lord with wisdom and good instruction and argue with them in a way that is best. Indeed, your Lord is most knowing of who has strayed from His way, and He is most knowing of who is guided. [Quran 16:125]
Let them know that the few minutes they save is not worth upsetting Allah, Most High.
If you find yourself with no other option, then pray in the car to honor the time of prayer. It is necessary to make up (qadha) the prayer.
You would not fall under the warning of this Hadith as you are not avoiding the prayer intentionally.
