Can a Muslim be appointed as the power of attorney over a family will who is non-Muslim? I am the only Muslim in my entire family history and my parents want me to be the power of attorney.

You may become the lawyer of non-Muslim family. It is also the desire of your parents. So, there is no harm in it as per the Shariah.
