In the name of Allah, the most Beneficent, the most Merciful.

Answer

It is not permissible for a Muslim to shake the hands of a strange woman.  Saaiduna Maqil Ibn Yassar Radiallahu Anhu narrates that the Prophet of Allah Sallallahu Alahi Wasalam said “It is better for a iron rod to be driven into the head of a man, than for him to touch a woman who is not permissible for him.”   (Imam Tabraani (RA) in his Mujam al-Kabir p.211 v.20)

With regards to your question it is advisable that you refrain from shaking the hands of a woman even though it may be for an interview.  Explain to the woman nicely that your religion does not allow you to touch a woman who is not lawful for you.
